Lemon Surprise Pudding
(Serves 4-6 people)

Ingredients

  • 100g/4 ozs. caster sugar
  • 50g/2 ozs. butter
  • 50g/2 ozs. self raising flour
  • 300ml/10 fl. ozs. milk
  • 2 eggs, separated
  • 2 lemons - grated rind & juice

Method

  1. Whisk the butter and sugar until pale & fluffy.
  2. Mix in the finely grated rind of 1 lemon.
  3. Add the egg yolks and flour & mix well.
  4. Stir in the milk and the juice of the two lemons.
  5. Whisk the eggs whites until stiff and fold into the mixture.
  6. Pour into a buttered dish & stand the dish in a tin of water.
   

Baking

AGA - 2 OVEN: Stand the tin in the ROASTING OVEN on the grid shelf resting on the floor of the oven - cook for about 35-40 minutes. To test - the top should be set and springy.
