Lemon Surprise
Pudding
(Serves 4-6 people) Ingredients
- 100g/4 ozs. caster sugar
- 50g/2 ozs. butter
- 50g/2 ozs. self raising flour
- 300ml/10 fl. ozs. milk
- 2 eggs, separated
- 2 lemons - grated rind & juice
Method
- Whisk the butter and sugar until pale & fluffy.
- Mix in the finely grated rind of 1 lemon.
- Add the egg yolks and flour & mix well.
- Stir in the milk and the juice of the two lemons.
- Whisk the eggs whites until stiff and fold into the mixture.
- Pour into a buttered dish & stand the dish in a tin of water.

AGA - 2 OVEN: Stand the tin in the ROASTING OVEN on the grid
shelf resting on the floor of the oven - cook for about 35-40 minutes. To test
- the top should be set and springy.
