Red Onion Marmalade
Equipment: Large frying pan (with lid) Ingredients
- 3 large red onions, finely sliced
- 1 tablespoon grapeseed (or sunflower) oil
- 1 heaped tablespoon hoisin sauce
- 75 ml. water
- 50g. light soft brown sugar
- 125ml. red wine (choose a robust wine for this dish)
- 75ml. balsamic vinegar

Method
- Heat the oil in the frying pan on the SIMMERING PLATE and add the red
onions.
- Cook the onions over medium heat for about 5 minutes.
- Add the sugar, hoisin sauce and water.
- Cover the pan, and simmer for a further 15 minutes.
- Add the red wine and balsamic vinegar, and bring to the boil on the BOILING
PLATE.
- Then, with the lid off, return the pan to the SIMMERING PLATE & simmer
for another 20 minutes - or until the liquid has turned syrupy.
This is delicious hot or cold, and will keep (covered) in the fridge for a
few days.
