Red Onion Marmalade
Equipment: Large frying pan (with lid)

Ingredients

  • 3 large red onions, finely sliced
  • 1 tablespoon grapeseed (or sunflower) oil
  • 1 heaped tablespoon hoisin sauce
  • 75 ml. water
  • 50g. light soft brown sugar
  • 125ml. red wine (choose a robust wine for this dish)
  • 75ml. balsamic vinegar
    
 

Method

  1. Heat the oil in the frying pan on the SIMMERING PLATE and add the red onions.
  2. Cook the onions over medium heat for about 5 minutes.
  3. Add the sugar, hoisin sauce and water.
  4. Cover the pan, and simmer for a further 15 minutes.
  5. Add the red wine and balsamic vinegar, and bring to the boil on the BOILING PLATE.
  6. Then, with the lid off, return the pan to the SIMMERING PLATE & simmer for another 20 minutes - or until the liquid has turned syrupy.

This is delicious hot or cold, and will keep (covered) in the fridge for a few days.
