Oven Temperatures

People who are new Aga owners, or who are contemplating buying an Aga, often ask me what is the temperature in each of the Aga ovens. They are concerned about adapting their favourite recipe timings, and want to be confident of these temperatures. In a very short space of time, though, by using an Aga they will become confident enough to judge by experience the amount of time they leave a dish to cook in a particular oven, and on which set of runners the dish should be placed. Aga oven temperatures are lower at the base of the oven than at the top, just like conventional ovens.

Because of this frequently asked question, I bought myself an accurate oven thermometer, and have recorded the temperatures in each oven of my own four oven Aga, and hope that this information will be helpful. When these temperatures were recorded, the temperature gauge on the heat indicator was precisely in the middle of the single black line, as the manufacturers recommend.

  Oven Temperatures in my 4 Oven Aga

ROASTING OVEN
Runners resting on oven bottom: 425°F/220°C/Gas 6
Runners second from top: 460°F/235°C/Gas 7
Runners at the very top: 475°F/240°C/Gas 8

BAKING OVEN
Runners resting on oven bottom: 350°F/180°C/Gas 4
Runners at top of oven: 400°F/200°C/Gas 5

SIMMERING OVEN
Runners on bottom of oven: 240°F/120°C/Gas ¾

WARMING OVEN
130°F/60°C/--
